The Lorighittas is a Traditional Agrifood Product PAT of Sardinian pasta. This type of pasta, with its characteristic ring or interlaced earring shape, is totally handmade and is typical of the village of Morgongiori. The ancient tradition of preparing lorighittas using only water, durum wheat semolina flour and salt, requires good manual skills. Usually, four to five hours of manual work are necessary to make one kg of product. In the end, the Lorighittas are sealed and put in “su caisteddu” (basket). Depending on the season, they are left to dry for 3 days up to a whole week. Once dried, the pasta is ready to be packed for sale or displayed in wicker baskets. The traditional arrangement in the basket resembles ornamental motifs typical of filet crochet decoration.
