Spaghetti with clams and mullet roe

Here's how to prepare spaghetti with clams and mullet roe:

800 g of clams
2 cloves of garlic
10 g of parsley
1 g chilli pepper
5 cl Vermentino di Sardegna
3 cl Janas Extra Virgin Olive Oil
400 g of Janas Squid ink Spaghetti
50 g of Janas mullet roe

Procedimento:

Wash the clams carefully in salt and water to remove the sand from their shells. In a sufficiently large pot, cook them over high heat with a clove of garlic, 5 g of parsley and Vermentino wine.

When the clams open, remove them from the heat after about 5 minutes, peel them and filter the cooking liquid through a fine-mesh strainer. Cook the spaghetti with squid ink in plenty of salted water.

Chop ½ a chilli pepper and a clove of garlic, after removing the core. Fry them in oil, then add the open clams and part of their cooking liquid.

Drain the spaghetti al dente and add it to the clams. Stir-fry in the pan adding some extra virgin olive oil until a smooth, glossy emulsion is obtained.

Arrange the pasta neatly on the plate and sprinkle with thinly sliced or freshly grated mullet roe.
